- 4 boneless, skinless chicken breasts (1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/2 cup sun-dried tomatoes (oil-packed), chopped
- 2 cups fresh baby spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat until shimmering. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and chopped sun-dried tomatoes, sautéing for about 1 minute.
- Pour in the heavy cream, scraping up any bits from the pan, then stir in grated Parmesan cheese and Italian seasoning until bubbling gently.
- Add fresh spinach to the sauce until wilted, then return the cooked chicken to the skillet to soak in the flavors.
- Serve over pasta or rice, garnished with additional Parmesan or fresh herbs.
