  • 3 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed), chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and chopped sun-dried tomatoes, sautéing for about 1 minute.
  4. Pour in the heavy cream, scraping up any bits from the pan, then stir in grated Parmesan cheese and Italian seasoning until bubbling gently.
  5. Add fresh spinach to the sauce until wilted, then return the cooked chicken to the skillet to soak in the flavors.
  6. Serve over pasta or rice, garnished with additional Parmesan or fresh herbs.
