Ingredients
- 4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes (packed in oil)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken; cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add sun-dried tomatoes and fresh spinach; cook until spinach wilts.
- Pour in heavy cream while stirring gently. Add grated Parmesan cheese until melted and incorporated.
- Return the chicken to the skillet, ensuring it's coated in the sauce. Simmer for about 5 minutes to meld flavors.
- Serve immediately over pasta or rice, garnished with extra Parmesan.
