  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes (packed in oil)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken; cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet.
  2. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add sun-dried tomatoes and fresh spinach; cook until spinach wilts.
  3. Pour in heavy cream while stirring gently. Add grated Parmesan cheese until melted and incorporated.
  4. Return the chicken to the skillet, ensuring it's coated in the sauce. Simmer for about 5 minutes to meld flavors.
  5. Serve immediately over pasta or rice, garnished with extra Parmesan.
