- 3–4 boneless, skinless chicken breasts (about 1.5 pounds)
 - 3 cloves fresh garlic, minced
 - 1 medium sweet onion, diced
 - 1 (4 oz) can mild or hot green chilies
 - 4 cups low-sodium chicken broth
 - 8 oz cream cheese, cubed
 - 2 tsp cumin
 - 2 tsp chili powder
 - Juice of 1 lime
 - Fresh cilantro (optional, for garnish)
 
Instructions
- Prepare ingredients by chopping onion and mincing garlic.
 - In a large pot over medium heat, sauté onions in olive oil until translucent. Add garlic and cook for an additional minute.
 - Add chicken breasts, cumin, and chili powder; stir until coated with spices.
 - Pour in chicken broth and green chilies; bring to a simmer for 20 minutes.
 - Remove chicken, shred it with forks, and return to the pot.
 - Stir in cream cheese until melted and incorporated.
 - Finish by adding lime juice; garnish with chopped cilantro before serving.
