- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups cannellini or great northern beans
- 1 medium onion, diced
- 3–4 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, softened
- 1 can (4 oz) diced green chilies
- 2 tsp ground cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions
- Dice the chicken breasts into bite-sized pieces.
- In a large pot over medium heat, sauté onions in olive oil until translucent. Add minced garlic and cook for an additional minute.
- Stir in the diced chicken along with cumin and chili powder; cook until chicken is no longer pink (6-7 minutes).
- Pour in the chicken broth and add white beans. Bring to a simmer for about 10 minutes.
- Reduce heat and mix in softened cream cheese until fully melted.
- Fold in green chilies and season with salt and pepper; simmer for another 5 minutes before serving.
