- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain rice
- 4 cups low-sodium chicken broth
- 1 cup mixed vegetables (onions, carrots, peas)
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried parsley
- 2 tbsp low-sodium soy sauce
- 1/2 tsp black pepper
Instructions
- Place the frozen or thawed chicken breasts in the bottom of the crockpot.
- Pour in the chicken broth until the chicken is submerged.
- Add mixed vegetables, garlic powder, thyme, parsley, and soy sauce. Stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked (internal temperature of 165°F), shred the chicken with two forks and mix well before serving.
