- 4 large yellow onions, thinly sliced
- 4 cups beef broth
- 4 tbsp unsalted butter
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 1 loaf crusty French bread, sliced thick
- 1 cup Gruyere cheese, shredded
- Salt and pepper to taste
Instructions
- Set your crockpot on low heat for slow simmering.
- In a skillet, melt butter over medium heat, add sliced onions, and sauté until golden brown (about 20 minutes).
- Transfer sautéed onions to the crockpot; add beef broth, thyme, salt, and pepper. Stir gently.
- Cover and cook on low for 6-8 hours.
- About 30 minutes before serving, top sliced French bread with Gruyere cheese and broil until golden brown.
- Serve the soup hot in bowls topped with cheesy bread.
