- 1 cup Medjool dates, pitted and chopped
- 1 cup rolled oats
- 1/2 cup raw almonds, chopped
- 1/2 cup unsweetened coconut flakes
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix together rolled oats, chopped almonds, coconut flakes, and salt. Set aside.
- In another bowl, combine pitted dates, peanut butter, honey or maple syrup, and vanilla extract until well blended.
- Pour the wet mixture into the dry ingredients and mix until evenly coated and sticky.
- Press the mixture firmly into the prepared baking pan for even thickness.
- Bake for 20-25 minutes until golden brown. Cool completely before cutting into squares or bars.
