Instructions
- Dice the chicken breasts into small cubes for even cooking.
- Heat olive oil in a large skillet over medium heat. Add the onions and bell peppers; sauté until softened (about 5 minutes).
- Stir in minced garlic and Cajun seasoning; cook for an additional minute until fragrant.
- Add the diced chicken to the skillet and cook until no longer pink (8-10 minutes), stirring occasionally.
- Pour in the chicken broth and simmer on low heat for about 10 minutes to blend flavors.
- Serve the chicken mixture on buns, topped with optional cheese or cilantro.
