- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 2 cups diced apples (Granny Smith or Honeycrisp)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, cream the softened butter with granulated sugar until light and fluffy. Add eggs one at a time along with vanilla extract; mix well.
- Gently fold in the dry ingredients and diced apples (and nuts if using) until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until golden brown; check doneness with a toothpick.
- Cool in the pan for 10 minutes before transferring to a wire rack.
