  • 2 large eggs, whisked
  • 1.5 cups Italian-seasoned breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1.5 cups marinara sauce
  • Fresh basil, for garnish (optional)
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels.
  2. Set up three shallow dishes: one with flour seasoned with salt and pepper, one with whisked eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
  3. Dredge each chicken breast first in flour, then dip into the egg mixture, and finally coat with breadcrumbs.
  4. Heat olive oil in a large skillet over medium heat. Fry the chicken for about 4-5 minutes on each side until golden brown.
