- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, whisked
- 1.5 cups Italian-seasoned breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1.5 cups marinara sauce
- Fresh basil, for garnish (optional)
- 3 tablespoons extra virgin olive oil
Instructions
- Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels.
- Set up three shallow dishes: one with flour seasoned with salt and pepper, one with whisked eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
- Dredge each chicken breast first in flour, then dip into the egg mixture, and finally coat with breadcrumbs.
- Heat olive oil in a large skillet over medium heat. Fry the chicken for about 4-5 minutes on each side until golden brown.
- Transfer the browned chicken to a baking dish. Spoon marinara sauce over each piece and sprinkle mozzarella cheese on top.
- Bake for about 20 minutes or until the cheese is bubbly and golden brown.
- Garnish with fresh basil before serving.
