- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 red bell pepper (cut into chunks)
- 1 yellow bell pepper (cut into chunks)
- 1 medium red onion (cut into large pieces)
- 1 medium zucchini (sliced into thick rounds)
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1 tsp sesame oil
Instructions
- In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
- Add the chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes (up to overnight).
- While the chicken marinates, chop the bell peppers, red onion, zucchini, and pineapple.
- Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
- Thread marinated chicken and veggies onto skewers in alternating patterns.
- Grill kabobs for about 10-15 minutes, turning frequently until the chicken is fully cooked (internal temperature of 165°F).
