Ingredients

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup cooked sausage or crumbled bacon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease silicone molds with cooking spray.
  2. In a bowl, whisk the eggs until frothy; add salt and pepper.
  3. Fold in cheese and spinach until well mixed.
  4. Stir in cherry tomatoes and any optional add-ins you choose.
  5. Pour the mixture into the molds, filling each about three-quarters full.
  6. Bake for 20-25 minutes until set and puffed.
  7. Let cool slightly before removing from molds. Serve warm or store in an airtight container.
