- 6 English muffins, halved
- 8 large eggs
- 1 cup diced ham
- 2 cups fresh spinach
- 1 cup shredded sharp cheddar cheese
- 1 cup whole milk
- 1 packet hollandaise sauce mix (or homemade equivalent)
Instructions
- Preheat your oven to 350°F (175°C). Lightly spray a baking dish with nonstick cooking spray.
- Arrange the halved English muffins cut-side up in the baking dish.
- In a skillet over medium heat, sauté diced ham until slightly crispy, then add fresh spinach until wilted.
- In a bowl, whisk together eggs and milk; season with salt and pepper until frothy.
- Pour the hollandaise sauce over the muffin layers followed by the egg mixture.
- Bake for 30-35 minutes or until golden brown on top and set in the middle.
