- 1 lb lean ground beef
- 8 corn tortillas
- 2 cups sharp cheddar cheese, shredded
- 1 can (10 oz) enchilada sauce
- 1 medium onion, chopped
- 1 cup bell peppers, chopped (any color)
- 1 can (15 oz) black beans, rinsed
- Fresh cilantro (optional), for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, sauté onions and bell peppers until softened, about 5 minutes.
- Add ground beef to the skillet, cooking until browned (7-10 minutes).
- Stir in enchilada sauce and black beans; let simmer for 5 minutes.
- Layer tortillas at the bottom of the baking dish, top with half of the meat mixture and cheese. Repeat layers with remaining ingredients.
- Bake uncovered for 25-30 minutes until bubbly and golden. Let rest for 5 minutes before serving.
