- 8 oz high-quality Greek feta cheese
- 3 cloves garlic (minced)
- 4 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.
- Add cherry tomatoes, crumbled feta, minced garlic, olive oil, salt, and pepper to the baking dish; toss to combine.
- Roast in the oven for 25-30 minutes until tomatoes burst and feta is golden.
- Meanwhile, cook pasta according to package instructions until al dente, reserving some pasta water before draining.
- Combine roasted tomato-feta mixture with cooked pasta, adding reserved pasta water as needed for desired creaminess.
- Stir in fresh basil just before serving.
