- 8 oz penne pasta
- 2 cups cherry tomatoes, halved
- 4 oz feta cheese, crumbled
- 1/4 cup fresh basil leaves, torn
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Chop garlic and halve cherry tomatoes.
- Cook the pasta: Boil salted water in a large pot. Cook penne until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
- Sauté aromatics: In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds).
- Add tomatoes and feta: Stir in the halved cherry tomatoes and crumbled feta. Cook until tomatoes soften (5-7 minutes).
- Combine everything: Add drained pasta to the skillet along with reserved pasta water as needed for creaminess. Mix well.
- Finish with basil: Remove from heat and stir in fresh basil. Season with salt and pepper before serving.
