Ingredients

  • 3 lbs Beef Chuck Roast
  • 4 cups Low-Sodium Beef Broth
  • 2 Medium Sweet Onions, sliced
  • 4 Hoagie Rolls
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 4 Garlic Cloves, minced
  • 1 tsp Whole Peppercorns
  • 2 tbsp Olive Oil

Instructions

  1. Preheat a large pot over medium-high heat. Add olive oil and sear the beef chuck roast on all sides (3-4 minutes per side). Remove from pot.
  2. In the same pot, sauté onions and garlic until translucent (5-7 minutes).
  3. Deglaze pot with half of the beef broth, scraping up bits.
  4. Return the roast to the pot with remaining broth, thyme, bay leaves, and peppercorns. Cover and simmer on low for 3-4 hours until fork-tender.
  5. Slice hoagie rolls without cutting through completely.
  6. Shred or slice beef and fill hoagie rolls. Serve with broth for dipping.
