- 3 lbs Beef Chuck Roast
- 4 cups Low-Sodium Beef Broth
- 2 Medium Sweet Onions, sliced
- 4 Hoagie Rolls
- 2 sprigs Fresh Thyme
- 2 Bay Leaves
- 4 Garlic Cloves, minced
- 1 tsp Whole Peppercorns
- 2 tbsp Olive Oil
Instructions
- Preheat a large pot over medium-high heat. Add olive oil and sear the beef chuck roast on all sides (3-4 minutes per side). Remove from pot.
- In the same pot, sauté onions and garlic until translucent (5-7 minutes).
- Deglaze pot with half of the beef broth, scraping up bits.
- Return the roast to the pot with remaining broth, thyme, bay leaves, and peppercorns. Cover and simmer on low for 3-4 hours until fork-tender.
- Slice hoagie rolls without cutting through completely.
- Shred or slice beef and fill hoagie rolls. Serve with broth for dipping.
