  • 2 large sweet yellow onions, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup long-grain white rice
  • 1 cup shredded Gruyère cheese
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until caramelized (15–20 minutes).
  2. Push onions aside and add ground beef. Cook until browned, breaking it apart (about 10 minutes).
  3. Stir in minced garlic, thyme, and bay leaf; cook for an additional 2 minutes.
  4. Pour in beef broth and stir in rinsed rice. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender (18–20 minutes).
  5. Remove from heat, sprinkle cheese on top, cover briefly until melted. Serve warm.
