- 1 lb ground beef (80/20 lean-to-fat ratio)
- 2 large sweet yellow onions, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup long-grain white rice
- 1 cup shredded Gruyère cheese
- 1 tsp fresh thyme leaves
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until caramelized (15–20 minutes).
- Push onions aside and add ground beef. Cook until browned, breaking it apart (about 10 minutes).
- Stir in minced garlic, thyme, and bay leaf; cook for an additional 2 minutes.
- Pour in beef broth and stir in rinsed rice. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender (18–20 minutes).
- Remove from heat, sprinkle cheese on top, cover briefly until melted. Serve warm.
