- 4 large sweet onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 cup dry white wine
- 6 cups low-sodium beef broth
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add sliced onions with a pinch of salt and sauté until soft, about 25-30 minutes.
- Stir in the dry white wine, scraping the bottom for flavor; simmer for 5 minutes.
- Add beef broth and thyme; simmer on low for 30-40 minutes. Adjust seasoning with salt and pepper.
- Toast baguette slices under the broiler until golden brown.
- Ladle soup into oven-safe bowls, top with baguette slices and Gruyère cheese, then broil until bubbly and golden.
