- 4 large sweet yellow onions, thinly sliced
 - 4 tbsp unsalted butter
 - 6 cups beef broth
 - ½ cup dry white wine
 - 1 crusty French baguette, sliced into thick rounds
 - 2 cups grated Gruyère cheese
 - 1 tbsp fresh thyme (or 1 tsp dried)
 - 1 tsp sugar
 - Salt & pepper to taste
 
Instructions
- Caramelize the Onions: In a large pot over medium heat, melt butter. Add sliced onions and sugar; stir regularly for 30-40 minutes until deep golden brown.
 - Add Flavor Boosters: Pour in white wine, scraping up bits from the pot. Add thyme and cook for another 5 minutes until reduced by half.
 - Create Your Broth Base: Stir in beef broth, season with salt and pepper, and let simmer on low for about 30 minutes.
 - Prepare the Baguette Topping: Toast baguette slices under the broiler until golden brown.
 - The Grand Finale: Ladle hot soup into oven-safe bowls, top each with two baguette slices and generous Gruyère cheese. Broil until bubbly and golden.
