  • 8 slices of soft bread (white or whole wheat)
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp ground cinnamon
  • 1/4 cup granulated sugar
  • 4 oz softened cream cheese
  • 1 cup sliced fruits (strawberries, bananas, etc.)
  • 2 tbsp butter (for frying)
  • 1 tsp vanilla extract

Instructions

  1. Cut off the crusts from each slice of bread and set aside.
  2. In a bowl, mix softened cream cheese, sugar, and vanilla extract until smooth.
  3. Flatten each bread slice with a rolling pin and spread the filling generously; add sliced fruits if desired. Roll tightly.
  4. In a shallow dish, whisk eggs, milk, and cinnamon together. Quickly dip each roll-up in the mixture without soaking.
  5. Heat butter in a skillet over medium heat. Place roll-ups seam side down and fry until golden brown on all sides (about 2-3 minutes per side).
  6. Serve warm with powdered sugar or maple syrup.
