- 8 slices of soft bread (white or whole wheat)
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp ground cinnamon
- 1/4 cup granulated sugar
- 4 oz softened cream cheese
- 1 cup sliced fruits (strawberries, bananas, etc.)
- 2 tbsp butter (for frying)
- 1 tsp vanilla extract
Instructions
- Cut off the crusts from each slice of bread and set aside.
- In a bowl, mix softened cream cheese, sugar, and vanilla extract until smooth.
- Flatten each bread slice with a rolling pin and spread the filling generously; add sliced fruits if desired. Roll tightly.
- In a shallow dish, whisk eggs, milk, and cinnamon together. Quickly dip each roll-up in the mixture without soaking.
- Heat butter in a skillet over medium heat. Place roll-ups seam side down and fry until golden brown on all sides (about 2-3 minutes per side).
- Serve warm with powdered sugar or maple syrup.
