  • 1 cup sweet onions, chopped
  • 2 cups fresh spinach
  • 1 cup cheese (feta or cheddar), shredded
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh herbs (basil or parsley), chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together eggs, salt, pepper, and herbs.
  5. Pour the egg mixture over the sautéed veggies in the skillet and sprinkle cheese on top.
  6. Bake for 20-25 minutes until puffed and set in the middle.
  7. Let cool slightly before slicing into wedges and serve warm or at room temperature.
