  • 8 frozen burritos (any flavor)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup medium salsa
  • 2 cups shredded Mexican blend cheese
  • 1 cup chopped sweet onions
  • 2 tsp olive oil
  • ½ cup sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, about 5 minutes.
  3. In a baking dish, layer half of the frozen burritos. Top with half of the black beans, salsa, sautéed onions, and cheese.
  4. Repeat layering with remaining ingredients.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
  6. Allow cooling slightly before serving with dollops of sour cream.
