  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced

  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  2. While the potatoes roast, heat a skillet over medium-high heat with olive oil. Season the steak pieces with salt and pepper, then add to the hot pan.
  3. Sear steak bites for about 4-5 minutes until browned. Reduce heat slightly; add minced garlic and butter, stirring until melted and combined.
  4. Once potatoes are done roasting, combine them with the steak bites in the skillet. Stir gently to coat everything in the garlic butter sauce.
