- 1 lb sirloin or ribeye steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 2 tbsp fresh parsley or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
- While the potatoes roast, heat a skillet over medium-high heat with olive oil. Season the steak pieces with salt and pepper, then add to the hot pan.
- Sear steak bites for about 4-5 minutes until browned. Reduce heat slightly; add minced garlic and butter, stirring until melted and combined.
- Once potatoes are done roasting, combine them with the steak bites in the skillet. Stir gently to coat everything in the garlic butter sauce.
- Serve hot, garnished with fresh herbs and a squeeze of lemon juice if desired.
