- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 2 tsp dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
- In a bowl, combine minced garlic, olive oil, salt, pepper, and dried herbs. Coat the chicken breasts in this mixture.
- Toss halved baby potatoes with olive oil, salt, pepper, and half of the Parmesan cheese.
- Place the seasoned chicken in the baking dish and arrange the potatoes around it.
- Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
- In the last five minutes of baking, sprinkle remaining Parmesan over everything for extra flavor.
- Serve hot and enjoy!
