  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. In a bowl, combine minced garlic, olive oil, salt, pepper, and dried herbs. Coat the chicken breasts in this mixture.
  3. Toss halved baby potatoes with olive oil, salt, pepper, and half of the Parmesan cheese.
  4. Place the seasoned chicken in the baking dish and arrange the potatoes around it.
  5. Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  6. In the last five minutes of baking, sprinkle remaining Parmesan over everything for extra flavor.
