Ingredients

  • 4 boneless, skinless chicken breasts
  • 5 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pat the chicken breasts dry and season with salt, pepper, thyme, and rosemary.
  3. Mix minced garlic with olive oil and half of the Parmesan cheese in a bowl.
  4. Place halved potatoes in the baking dish, drizzle with olive oil, season with salt and pepper, then toss.
  5. Lay seasoned chicken on top of the potatoes and pour the garlic mixture over both.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden.
