- 4 boneless, skinless chicken breasts
- 5 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Pat the chicken breasts dry and season with salt, pepper, thyme, and rosemary.
- Mix minced garlic with olive oil and half of the Parmesan cheese in a bowl.
- Place halved potatoes in the baking dish, drizzle with olive oil, season with salt and pepper, then toss.
- Lay seasoned chicken on top of the potatoes and pour the garlic mixture over both.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden.
