- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Cut chicken into bite-sized pieces.
- In one bowl, whisk eggs; in another, combine panko breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper.
- Dip each chicken piece into the egg wash and then coat with the breadcrumb mixture.
- Place on a non-stick baking sheet and drizzle with olive oil. Bake for 20-25 minutes until golden brown and cooked through.
- Allow to cool slightly before serving with your favorite dipping sauce.
