- 1.5 lbs baby Yukon gold potatoes
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Wash and halve the baby potatoes; toss in a bowl with olive oil until coated.
- Add minced garlic, salt, and pepper; mix well.
- Stir in grated parmesan until all potatoes are covered.
- Spread on a parchment-lined baking sheet; bake for 25-30 minutes until golden brown and fork-tender.
- Sprinkle with parsley before serving.
