- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 slices bacon, diced
- 1/2 cup red onion, finely chopped
- 1/3 cup apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp sugar
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Boil salted water in a large pot. Add Yukon Gold potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a skillet over medium heat, cook diced bacon until crispy. Remove with a slotted spoon and drain on paper towels.
- Whisk together apple cider vinegar, Dijon mustard, sugar, salt, and pepper in a bowl.
- Stir in crispy bacon bits and red onion into the dressing. Add warm potatoes and gently toss until coated.
- Sprinkle chopped parsley over the salad before serving warm or at room temperature.
