  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 slices bacon, diced
  • 1/2 cup red onion, finely chopped
  • 1/3 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil salted water in a large pot. Add Yukon Gold potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a skillet over medium heat, cook diced bacon until crispy. Remove with a slotted spoon and drain on paper towels.
  3. Whisk together apple cider vinegar, Dijon mustard, sugar, salt, and pepper in a bowl.
  4. Stir in crispy bacon bits and red onion into the dressing. Add warm potatoes and gently toss until coated.
  5. Sprinkle chopped parsley over the salad before serving warm or at room temperature.
