- 2 cups ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 1 tbsp fresh ginger, grated
- 2 tbsp extra virgin olive oil
- 1 baguette, sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine diced tomatoes, chopped basil, grated ginger, olive oil, salt, and pepper. Stir well.
- Taste and adjust seasoning if necessary.
- Arrange baguette slices on a baking sheet and toast for 5-7 minutes until golden brown.
- Top toasted bread with the tomato mixture and serve immediately.
