  • 1 cup plain Greek yogurt
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth but chunky.
  3. Add Greek yogurt, eggs, brown sugar, and vanilla extract to the bananas; whisk until combined.
  4. In another bowl, mix flour, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Spoon the batter into the muffin tin, filling each cup two-thirds full.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Let cool for five minutes before transferring to a wire rack.
