- 3–4 boneless, skinless chicken breasts
- 6 cups fresh romaine lettuce, chopped
- 1 cup Caesar dressing (homemade recommended)
- ½ cup freshly grated Parmesan cheese
- 1 cup croutons
- Juice of 1 lemon
- 2 tsp Dijon mustard
- 4 tbsp extra virgin olive oil
- 2 garlic cloves, minced
Instructions
- Preheat grill to medium-high heat. Season chicken breasts with salt, pepper, and olive oil; let marinate.
- Grill chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
- While chicken grills, wash and chop romaine lettuce into bite-sized pieces; pat dry.
- In a bowl, whisk together Caesar dressing ingredients: mayonnaise, lemon juice, Dijon mustard, minced garlic, and Parmesan cheese until creamy.
- Toss chopped lettuce with croutons and additional Parmesan in a large bowl.
- Slice grilled chicken and add to the salad; drizzle with dressing and gently toss to combine.
