  • 6 cups fresh romaine lettuce, chopped
  • 1 cup Caesar dressing (homemade recommended)
  • ½ cup freshly grated Parmesan cheese
  • 1 cup croutons
  • Juice of 1 lemon
  • 2 tsp Dijon mustard
  • 4 tbsp extra virgin olive oil
  • 2 garlic cloves, minced

Instructions

  1. Preheat grill to medium-high heat. Season chicken breasts with salt, pepper, and olive oil; let marinate.
  2. Grill chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  3. While chicken grills, wash and chop romaine lettuce into bite-sized pieces; pat dry.
  4. In a bowl, whisk together Caesar dressing ingredients: mayonnaise, lemon juice, Dijon mustard, minced garlic, and Parmesan cheese until creamy.
  5. Toss chopped lettuce with croutons and additional Parmesan in a large bowl.
  6. Slice grilled chicken and add to the salad; drizzle with dressing and gently toss to combine.
