  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tsp red pepper flakes (adjust to taste)

Instructions

  1. Prepare the eggplants by washing and slicing them into half-inch thick rounds. Sprinkle lightly with salt and let rest for 30 minutes to draw out moisture.
  2. Preheat your grill to medium-high heat. Brush both sides of each eggplant slice with olive oil.
  3. Grill the eggplant for about 5-7 minutes on each side until golden brown and tender.
  4. While grilling, make the garlic sauce by mixing minced garlic, olive oil, lemon juice, parsley, salt, pepper, and red pepper flakes in a bowl.
