- 2 medium eggplants (approximately 500g)
- 4 cloves fresh garlic, minced
- 4 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tsp red pepper flakes (adjust to taste)
Instructions
- Prepare the eggplants by washing and slicing them into half-inch thick rounds. Sprinkle lightly with salt and let rest for 30 minutes to draw out moisture.
- Preheat your grill to medium-high heat. Brush both sides of each eggplant slice with olive oil.
- Grill the eggplant for about 5-7 minutes on each side until golden brown and tender.
- While grilling, make the garlic sauce by mixing minced garlic, olive oil, lemon juice, parsley, salt, pepper, and red pepper flakes in a bowl.
- Once grilled, drizzle the eggplants generously with the garlic sauce while warm. Serve immediately.
