- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 ripe mangoes, diced
- 1 cup fresh pineapple chunks
- 3 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup freshly squeezed lime juice
- 2 tbsp pure honey
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken by mixing soy sauce, lime juice, garlic, honey, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, mango chunks, and pineapple onto skewers.
- Grill skewers for about 5-7 minutes on each side or until the chicken reaches an internal temperature of 165°F.
- Let the skewers rest for a few minutes before serving.
