- 1 red bell pepper, cut into chunks
 - 1 yellow bell pepper, cut into chunks
 - 1 medium zucchini, sliced into thick rounds
 - 1 cup cherry tomatoes, halved
 - 8 oz button mushrooms
 - 2 tbsp olive oil
 - 1 tsp dried oregano
 - Salt and pepper to taste
 
Instructions
- Wash and prepare all vegetables.
 - In a bowl, whisk olive oil with oregano, salt, and pepper. Toss the veggies until coated.
 - Let marinate for at least 30 minutes.
 - Thread the veggies onto skewers in an alternating pattern.
 - Preheat grill to medium-high heat (around 400°F).
 - Grill skewers for 10-15 minutes, turning occasionally until charred and tender.
 - Remove from grill and let rest for a few minutes before serving.
