Instructions
- Marinate the chicken by mixing taco seasoning and olive oil in a bowl. Coat the chicken thighs evenly and let sit for at least 30 minutes.
- Heat a skillet over medium-high heat. Sear each marinated thigh for about 5-7 minutes per side until golden brown and cooked through.
- Remove from heat and let the chicken rest before shredding it into tender strands using two forks.
- Warm tortillas in a separate skillet or microwave until soft.
- Assemble tacos by placing shredded chicken on each tortilla and topping with fresh cilantro, salsa verde, and optional toppings like cheese or avocado.
- Serve immediately with lime wedges.
