- 30 oz frozen shredded hashbrowns
- 2 cups sharp cheddar cheese, shredded
- 1 cup full-fat sour cream
- 10.5 oz cream of chicken soup (or cream of mushroom for vegetarian)
- 1 medium onion, chopped
- 4 tbsp butter, melted
Instructions
- Preheat your oven to 350°F (175°C) for even cooking.
- In a skillet over medium heat, melt butter and sauté chopped onions until translucent (about 5 minutes).
- In a large mixing bowl, combine frozen hashbrowns, sautéed onions, cheddar cheese, sour cream, and cream of chicken soup. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake uncovered for about 45 minutes, or until golden brown and bubbly.
- Let the casserole rest for 10 minutes before serving.
