- 1 cup grated zucchini (about 1 medium zucchini)
- Optional: 1/4 cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Grate the zucchini and set it aside to drain excess moisture.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the egg, brown sugar, oil, and vanilla until smooth.
- Combine the wet and dry ingredients without overmixing. Gently fold in the grated zucchini and any optional mix-ins.
- Spoon the batter into muffin tins, filling each about three-quarters full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
