Ingredients

  • 1 cup bell peppers, finely chopped (mix of red and yellow)
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese (or feta)
  • Salt and pepper to taste
  • Cooking spray or 2 tsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté onion in olive oil over medium heat until translucent (3-4 minutes). Add bell peppers and spinach; cook until just wilted.
  3. In a bowl, whisk eggs with salt, pepper, and half the cheese.
  4. Fold in sautéed vegetables until well combined.
