- 1 package (8 oz) pastry sheets
- 3 medium potatoes (about 1 lb)
- 1 cup frozen green peas
- 1 tsp cumin seeds
- 2 tsp coriander powder
- 1 tsp garam masala
- 1 medium onion, chopped
- 2 tbsp vegetable oil (plus more for frying)
- Salt to taste
Instructions
- Boil the potatoes until tender, then cool, peel, and mash.
- In a pan, heat 2 tbsp of oil over medium heat and sauté the chopped onion until golden.
- Add cumin seeds, coriander powder, and garam masala; cook until fragrant.
- Stir in the mashed potatoes and frozen peas; season with salt.
- Cut pastry sheets into strips about three inches wide; keep covered with a damp towel.
- Place a tablespoon of filling at one end of each strip; fold into triangles and seal edges tightly.
- Heat oil in a skillet over medium heat; fry samosas in batches for about 4-5 minutes until golden brown.
