  • 1 package (8 oz) pastry sheets
  • 3 medium potatoes (about 1 lb)
  • 1 cup frozen green peas
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1 medium onion, chopped
  • 2 tbsp vegetable oil (plus more for frying)
  • Salt to taste

Instructions

  1. Boil the potatoes until tender, then cool, peel, and mash.
  2. In a pan, heat 2 tbsp of oil over medium heat and sauté the chopped onion until golden.
  3. Add cumin seeds, coriander powder, and garam masala; cook until fragrant.
  4. Stir in the mashed potatoes and frozen peas; season with salt.
  5. Cut pastry sheets into strips about three inches wide; keep covered with a damp towel.
  6. Place a tablespoon of filling at one end of each strip; fold into triangles and seal edges tightly.
  7. Heat oil in a skillet over medium heat; fry samosas in batches for about 4-5 minutes until golden brown.
