- 3/4 cup granulated sugar
- 1/4 cup honey
- 2 fresh peaches, diced (about 1 cup)
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat softened butter and sugar until creamy. Add eggs one at a time, mixing well after each addition.
- Blend in cream cheese and vanilla extract until smooth.
- Gradually fold in dry ingredients until just combined. Do not overmix.
- Scoop about 2 tablespoons of batter into each cupcake liner and top with diced peaches.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Drizzle honey over the cupcakes before serving.
