  • 1 lb Italian sausage (mild or spicy)
  • 12 oz penne pasta
  • 28 oz crushed tomatoes (preferably San Marzano)
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 cups fresh spinach (optional)
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking until translucent.
  2. Crumble in the Italian sausage and cook until browned.
  3. Stir in the crushed tomatoes, seasoning with salt and pepper. Simmer while preparing pasta.
  4. Boil salted water in a large pot and cook penne until al dente.
  5. Drain pasta, reserving some cooking water. Combine pasta with sausage-tomato mixture, adding reserved water for consistency.
  6. If using spinach, stir it in until wilted. Top with grated Parmesan before serving.
