  • 8 oz penne or rigatoni pasta
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 medium yellow onion, chopped
  • 1 bell pepper (red or green), chopped
  • 28 oz crushed tomatoes (canned)
  • ¼ cup fresh basil, chopped
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  2. Sauté the Vegetables: In a large skillet over medium heat, heat olive oil. Add chopped onion and bell pepper; sauté for about 5 minutes until softened.
  3. Brown the Sausage: Remove casings from Italian sausage and crumble into the skillet. Cook until browned and fully cooked through, approximately 7-10 minutes.
  4. Add Garlic and Tomatoes: Stir in minced garlic and cook for another minute. Add crushed tomatoes, stir well, and let simmer on low heat for about 5 minutes.
  5. Combine: Toss cooked pasta into the sauce mixture along with reserved pasta water as needed. Mix until well coated.
  6. Finish: Remove from heat and stir in fresh basil and Parmesan cheese. Serve immediately.
