- 2 cups cake flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (room temperature)
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 8 oz cream cheese (softened)
- 2 cups confectioners' sugar (sifted)
- Zest of 1 lemon
- Optional: 1/4 cup chopped pistachios or almonds for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
- In a large bowl, whisk together cake flour, sugar, baking powder, and salt.
- In another bowl, beat the butter until creamy; gradually add the sugar until light and fluffy.
- Add eggs one at a time, followed by vanilla extract. Mix well without overmixing.
- Gradually combine wet and dry ingredients with milk until just incorporated.
- Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
- While cooling, beat cream cheese with sifted confectioners' sugar until smooth; mix in lemon zest.
- Once cakes are completely cool, frost between layers and on top, garnishing with nuts if desired.
