  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 8 oz cream cheese (softened)
  • 2 cups confectioners' sugar (sifted)
  • Zest of 1 lemon
  • Optional: 1/4 cup chopped pistachios or almonds for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. In a large bowl, whisk together cake flour, sugar, baking powder, and salt.
  3. In another bowl, beat the butter until creamy; gradually add the sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla extract. Mix well without overmixing.
  5. Gradually combine wet and dry ingredients with milk until just incorporated.
  6. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  7. While cooling, beat cream cheese with sifted confectioners' sugar until smooth; mix in lemon zest.
  8. Once cakes are completely cool, frost between layers and on top, garnishing with nuts if desired.
