- 4 boneless, skinless chicken breasts
- 2 fresh jalapeños, diced (seeds removed for less heat)
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 tsp garlic powder
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Slice each chicken breast horizontally to create pockets.
- In a bowl, mix cream cheese, cheddar cheese, diced jalapeños, and garlic powder until well combined.
- Stuff each chicken pocket with the filling and secure with toothpicks if necessary.
- Place stuffed chicken in a greased baking dish. Drizzle olive oil over the top and sprinkle panko breadcrumbs.
- Bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- Let cool slightly before serving hot with your choice of sides.
