- 2 Scotch bonnet peppers (seeds removed for less heat)
- 1/4 cup fresh thyme leaves
- 4 garlic cloves, minced
- 2 tbsp brown sugar
- 1/4 cup fresh lime juice
- 2 tbsp low-sodium soy sauce
- 1 tsp pimento seeds (allspice)
- Salt and pepper to taste
Instructions
- Create the Marinade: Blend Scotch bonnet peppers, garlic, thyme, brown sugar, lime juice, soy sauce, pimento seeds, salt, and pepper until smooth.
- Marinate Chicken: Place chicken thighs in a bowl or resealable bag; pour marinade over chicken. Refrigerate for at least 2 hours or overnight.
- Preheat Grill: Heat grill to medium-high (375°F/190°C).
- Grill Chicken: Cook marinated chicken thighs for 6-8 minutes per side until charred and internal temperature reaches 165°F (75°C).
- Let it Rest: Cover grilled chicken with foil for 5 minutes before slicing.
- Serve: Enjoy with your favorite sides and drizzle remaining marinade on top.
