- 4 cups fresh kale leaves, chopped
- 8 oz whole wheat spaghetti
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds). Add kale and cook until wilted (about 3-4 minutes).
- Lower heat and add drained pasta to the skillet with the kale mixture. Stir well, adding reserved pasta water gradually until desired consistency is reached.
- Mix in grated Parmesan cheese and season with salt and pepper to taste.
- Serve immediately, garnished with additional cheese if desired.
