- 1 cup cherry tomatoes, halved

- 1/2 cup feta cheese, crumbled

- Salt and pepper to taste
Instructions
- Rinse the kale under cool water and dry thoroughly. Remove tough stems and tear leaves into bite-sized pieces.
- In a large bowl, combine kale, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the salad and toss to coat all ingredients evenly.
- Gently fold in crumbled feta cheese right before serving.
- Serve immediately or chill in the fridge for 30 minutes for enhanced flavor.
