  • 1 lb lean ground beef (80/20)
  • 1 cup grated cheddar cheese (fresh)
  • 3 large eggs
  • 1/2 cup heavy cream (or sour cream)
  • 1 medium yellow onion (diced)
  • 1 cup bell peppers (diced; mixed colors)
  • 1/4 cup sugar-free ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Sauté diced onions and bell peppers in a skillet over medium heat until softened, about 5 minutes.
  3. Add ground beef to the skillet, breaking it apart as it cooks. Brown completely for about 7-10 minutes; drain excess fat if needed.
  4. Stir in garlic powder, salt, pepper, ketchup, and mustard until combined.
  5. In a bowl, whisk together eggs and heavy cream. Mix into the beef mixture thoroughly.
  6. Layer half of the beef mixture in the baking dish, sprinkle with half of the cheese, add remaining beef mixture, and top with more cheese.
  7. Bake for 30-35 minutes until bubbly and golden brown.
