- 1 lb lean ground beef (80/20)
- 1 cup grated cheddar cheese (fresh)
- 3 large eggs
- 1/2 cup heavy cream (or sour cream)
- 1 medium yellow onion (diced)
- 1 cup bell peppers (diced; mixed colors)
- 1/4 cup sugar-free ketchup
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Sauté diced onions and bell peppers in a skillet over medium heat until softened, about 5 minutes.
- Add ground beef to the skillet, breaking it apart as it cooks. Brown completely for about 7-10 minutes; drain excess fat if needed.
- Stir in garlic powder, salt, pepper, ketchup, and mustard until combined.
- In a bowl, whisk together eggs and heavy cream. Mix into the beef mixture thoroughly.
- Layer half of the beef mixture in the baking dish, sprinkle with half of the cheese, add remaining beef mixture, and top with more cheese.
- Bake for 30-35 minutes until bubbly and golden brown.
