  • 1 lb boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 4 green onions, chopped
  • 2 tbsp sesame oil (toasted preferred)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp Korean red pepper flakes (gochugaru)
  • 2 tbsp honey
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Trim excess fat from the chicken thighs and pat them dry.
  2. In a bowl, whisk together soy sauce, brown sugar, garlic, sesame oil, rice vinegar, and gochugaru to create the marinade.
  3. Place chicken in a resealable bag or dish, pour in the marinade, and massage into the meat. Marinate for at least 30 minutes in the fridge.
  4. Preheat your grill to medium-high heat (400°F/200°C).
  5. Grill the chicken for about 6-7 minutes per side until fully cooked (internal temperature of 165°F).
  6. Let rest briefly before serving; sprinkle with green onions and sesame seeds.
